Cultivation
The almost 2 hectares of olive groves are divided into various plots in the territory of Missano at altitudes from 250 to 450 meters.

The varieties cultivated are Lavagnina, Pignola and Leccino.
Harvest
The olives are harvested by hand and brought to the oil mill in the day, in order to preserve the best organoleptic characteristics.
